So I decided to make vegetarian stuffed peppers for dinner tonight. I really want to have 5-6 vegetarian staples to throw together for dinner at a moments notice - tasty, healthy and at least fairly easy to prepare - this was one of those meals. I had a bag of small orange, yellow and red peppers in the fridge. I made a delicious filling with mushrooms, onions, fresh sliced garlic and shallots, steamed lentils and spinach. I added a splash of sweet bbq sauce and stuffed away. Baked 40 minutes and then had absolutely delicious veggie stuffed peppers. Yumkins. Enough said!
