Paleo Shmaleo




Busy as heck today. Got a lot accomplished though and so that’s always a good thing to be able to say. I am making the following slight change to my goals:  on Meatless Monday’s I’m not going to enforce “Paleo” dinners. I’m simply not getting enough calories on MM (even with carbs they’re low) but without them at dinner it’s too low – so this minor change will correct that. I end today with 1450 – which is still very low but I am always cognizant of the fact
that my calories can be off by up to 5% (room for error) which means an add’l  72.5 calories for those of you counting.

Here’s why I do that. When the label says a large egg has 75 calories – this assumes that all eggs are equal in size and weight and of course they are not. When I use one ‘tbsp’ of PB2, I don’t use a knife to scrape the tbsp to a flat top which makes it ‘rounded’.  So these types of measurements
tend to under exaggerate calories as anyone who counts them can attest. So I leave a 5% cushion for my total daily calories (done behind the scenes) to insure that I’m at or under goal as often as possible. It works for me. 


Note: didn't have pineapples for a snack - calories changed to 1350
