Dr. David Kessler, Former FDA
Commissioner, conducted an in-depth investigation into the overeating epidemic in
the United States. He started with Katherine Flegal, a Senior Research
Scientist at the CDC. She was the first person to discover a new trend using an
enormous database of research. What her research uncovered was that somewhere in the 1980s there began a dramatic spike in
the number of American’s that were overweight. Researchers had never seen such
extreme numbers. In earlier decades, the pattern shows American’s maintaining their weight with just a minor gain of a few pounds before
turning 60 and losing a couple thereafter. Ms. Flegal collected data from
1988-1991 and the results were conclusive and startling. Millions and millions
of American’s were becoming fat and obese at an alarming rate and she wanted to
know why.
So did Dr. Kessler who wrote a NY
Times Bestseller called “The End of Overeating”, a comprehensive exposé of the
food industry and a close look at marketing researchers that were used to help sculpt our eating behaviors. Of course
it was much more complicated than that, but the long and short of it is scientific
research shows that a brain chemical called dopamine can easily be manipulated to
condition people to eat on cue, creating deep seeded habits that
drive us to eat even long
after we're satisfied. It basically proves that in the 1980s millions and
millions of American’s didn’t suddenly contract the “chronic lack of self-control”
disease. But instead what they caught was the ‘Pavlov’s Dog Syndrome’.
Remember in high school biology, the story of Pavlov's'
dog? Pavlov set out to see if he could condition the dog to salivate at the
sound of a ringing bell. So, he rang that bell every time he fed the dog, and
sure enough he got the intended result. Well, advertisers and food industry
experts have figured out how to use behavior modification to successfully sell
food.
I couldn’t agree more with Dr. Kessler’s findings. We need to take back control.
