Just a Matter of Time





The trouble with going ‘gluten free’ is you have to watch yourself. I thought it would be a simple change – but it wasn’t. I think there must be some addictive properties to gluten because I noticed after a couple days that I was craving carbs – and I don’t usually crave them (probably because I ate them regularly). At any rate, I have to make sure that all carbohydrates in my home are gluten free – this way I don’t grab anything that has gluten – like the crackers I ate yesterday. I feel very confident that I’ll be able to become totally gluten free within 2-3 weeks. It will just take some practice, discipline, getting use-to and replenishment of resources.

That’s all! It’s just a matter of time. My goal is to be able to say that I am living a gluten free life by end of February. And in order to make that declaration – I will have to be gluten free for about two weeks. I think psychologically speaking 2 weeks is the cementing of a habit. So that’s where I’m headed. It’s such an exciting year already and we’re only on day 19!. Meanwhile…
