Big Pot of Wow

Another exceptional day. Weather was a perfect 84, sunny with a slight breeze. Did a lot of walking this afternoon. Made a big pot of rice and black beans with chopped ham steak (found organic black beans with low sodium only 94mg per ½c compared to 475mg Goya– Love it!!) I also had a jar of organic jalapeno pepper chunky bruschetta in the pantry (whenever I’m out shopping I always look at sauces and spices – I keep them tucked away and use them to jazz up a dish). So I took two tablespoons (30 cal) and poured on top of the Rice and beans, mixed in and wow! What a great burst of flavor and heat. Just delicious. So of course I made another big pot full and that will be lunch for a couple days! Yumalicious!
